Sonali Bhuna

Ingredients

  • 800 g sonali chicken, curry cut
  • 3 onions, sliced fine
  • 2 tbsp mustard oil
  • 1 tbsp ginger-garlic paste
  • 2 tsp red chilli
  • 1 tsp turmeric
  • 1 tsp garam masala
  • Salt

Method

  1. 1 Bhuna means no water, so commit to that from the start.
  2. 2 Fry onions in mustard oil until deep brown, then add ginger-garlic.
  3. 3 Add the chicken and all dry masalas together, and keep stirring on medium heat.
  4. 4 It will release its own moisture and then reabsorb it - that takes about 35 minutes.
  5. 5 Done when the oil pools clear at the edges and the masala clings to each piece.
