Dhaba Egg Curry

Ingredients

  • 6 country eggs, boiled and peeled
  • 2 onions, paste
  • 3 tomatoes, paste
  • 1 tsp cumin seeds
  • 1 tsp turmeric
  • 1.5 tsp red chilli
  • 1 tsp coriander powder
  • 2 tbsp oil
  • Salt

Method

  1. 1 Prick the boiled eggs with a fork and shallow-fry them with a pinch of turmeric until golden. Set aside.
  2. 2 Temper cumin, add onion paste and cook until it stops smelling raw.
  3. 3 Add tomato paste and the dry masalas; cook until the oil separates cleanly.
  4. 4 Add a cup of hot water, bring to a simmer, then slide the eggs back in.
  5. 5 Simmer five minutes so the gravy gets into the scored skin.
